Apple & damson fridge chutney
A tangy small-batch chutney for the fridge, combining apples, damsons and onion.
Method
- 1
Peel, core and dice the apples. Halve and stone the damsons where practical; finely chop the onion.
- 2
Put all ingredients in a non-reactive saucepan. Bring gently to a simmer, stirring until the sugar dissolves.
- 3
Cook uncovered over low heat for 45–55 minutes, stirring increasingly often, until thick and glossy with no watery liquid pooling.
- 4
Cool, spoon into very clean containers, cover and refrigerate. This is a refrigerator chutney, not a shelf-stable canning recipe.
Do not reduce the vinegar or sugar if you want the intended flavour and texture.
Keep refrigerated and use within 2 weeks. Use a clean spoon each time and discard if mould, fizzing or an off smell develops.
No major allergens in the listed ingredients.
