Serve as a main with salad or as a side to a roast.
Cauliflower & leek gratin
Tender cauliflower and leek in a creamy sauce beneath a golden cheesy topping.
Method
- 1
Heat the oven to 190°C fan. Cut cauliflower into florets and slice washed leeks. Steam or boil the cauliflower for 5 minutes, then drain very well.
- 2
Melt butter, stir in flour and cook for 1 minute. Gradually whisk in milk and simmer until thick. Stir in half the cheese.
- 3
Put cauliflower and leeks in a baking dish, pour over the sauce and top with remaining cheese and breadcrumbs.
- 4
Bake for 25–30 minutes until bubbling, golden and the vegetables are tender.
Drain the cauliflower thoroughly so it does not water down the sauce.
Cool promptly and refrigerate for up to 2 days. Reheat until piping hot throughout.
Contains milk and wheat/gluten.
