Garlic & ginger greens stir-fry
A fast way to cook seasonal greens while keeping them bright and full of texture.
Method
- 1
Wash and thoroughly drain the greens. Slice tougher stems thinly and keep them separate from the leaves. Finely slice garlic and ginger.
- 2
Heat a wok or large frying pan until hot. Add oil, tougher stems, garlic and ginger and stir-fry for 2 minutes.
- 3
Add the leaves and stir-fry for another 2–3 minutes until wilted but still bright.
- 4
Add soy sauce, toss for 30 seconds and serve immediately.
A hot pan and well-drained greens prevent the vegetables from boiling in their own water.
Best freshly cooked. Refrigerate leftovers for up to 2 days and reheat thoroughly.
Contains soya; most soy sauces also contain wheat/gluten. Check the label.
