Serve as a tea cake or warm with yoghurt.
Pear & ginger tray cake
Soft pear and warming ginger in an easy square tray cake.
Method
- 1
Heat the oven to 170°C fan. Grease and line a 20 cm square tin. Peel, core and dice two pears; thinly slice the third.
- 2
Beat butter and sugar until light, then beat in eggs. Fold in flour and ginger, followed by milk and the diced pear.
- 3
Spread into the tin and arrange the sliced pear over the top.
- 4
Bake for 30–35 minutes until golden and a skewer inserted into the cake comes out without wet batter. Cool before slicing.
Do not use pears so ripe that they collapse when diced; they can make the sponge heavy.
Keep covered for up to 2 days in a cool place or refrigerate for up to 3 days.
Contains milk, egg and wheat/gluten.
