Plum upside-down cake
Juicy plums bake beneath a simple vanilla sponge and become the glossy top when turned out.
Method
- 1
Heat the oven to 170°C fan. Grease and line the base of a 20 cm cake tin. Halve and stone the plums.
- 2
Sprinkle brown sugar over the base and arrange the plums cut-side down.
- 3
Beat butter and caster sugar until light. Beat in eggs one at a time, then fold in flour and vanilla. Spread gently over the fruit.
- 4
Bake for 35–40 minutes until risen and a skewer inserted into the sponge comes out clean. Rest for 10 minutes, then carefully invert onto a plate.
Firm-ripe plums hold their shape better than very soft fruit.
Keep covered in a cool place for 1 day or refrigerate for up to 3 days.
Contains milk, egg and wheat/gluten.
