Serve as it is or with greens and a fresh salad.
Yam & pepper stew
Tender yam simmered in a rich tomato, pepper and chilli sauce.
Method
- 1
Peel the yam thickly and cut into 3 cm chunks. Chop the peppers and onion and finely chop garlic and chilli.
- 2
Soften onion and peppers in oil for 7–8 minutes. Add garlic and chilli for 1 minute.
- 3
Add tomatoes, stock and yam. Bring to a gentle simmer, cover and cook for 20–25 minutes.
- 4
Uncover for the final 5 minutes if the sauce needs thickening. The yam should be completely tender when pierced. Season and serve.
Cut the yam evenly so every piece becomes tender at the same time.
Cool promptly and refrigerate covered for up to 3 days. Reheat until piping hot throughout.
Check the vegetable stock label for allergens.
